Sausage and Sweet Potato Stuffed Peppers

I have previously sent you a messy version of this via email, so here it is in a more user friendly version. Bob and I made these a couple of nights ago last without the mozzarella (we are starting out the new year dairy free), and they were yummy. We like to get the andouille sausage from Whole Foods. This time they did not have enough, so we added a half pound of spicy Italian and it was yummy. Bob takes the leftovers for lunch, and texts me things like "peppers peppers peppers!" Or how he is dreaming about eating a pepper for lunch. I am pretty sure his life revolves around making you, me and his belly happy...and I suppose a little engine designing in between : )






Sweet Potato Cod Cakes with Dijon Tartar Sauce

This recipe is a labor of love. It would probably go quicker if you have a machine to chop your veggies, I am kind of weird though and like chopping : ) I also made my own mayo, (vegetable oil is a no-no for paleo, so I used a mix of coconut oil and olive oil to make my own). Here is a link to the recipe I used: Paleo Mayo. I purchased my cod from Trader Joe's. They sell a package of discarded fillet chunks, and are pretty cheap. Bob said this recipe tasted like crab cakes and also said..."that is a lot of work for 12 cakes." But when I eat the tasty leftovers today, I think I will be alright with my little labor of love.
